Today I cooked stuffed zucchini!

The zucchini were filled with a homemade vegan Bolognese made with carrots, celery, onion, garlic, soy mince and the zucchini flesh. I added a little soy sauce for extra umami, roasted the tomato paste, then cooked everything in vegetable broth until the liquid had evaporated before adding the tomatoes. Finally, I added some oregano.

Then everything was topped with vegan cheese and baked until nicely gratinated.

Served with a rustic tomato sauce made simply from tomatoes, salt, pepper and some oregano.

Today’s food: Rajma! 🇮🇳🌶️

I made an Indian kidney bean curry because I found two cans of kidney beans hiding in my cupboard and figured I might as well turn them into something delicious xD

The Rajma is made with kidney beans, onion, ginger, garlic, chili, tomatoes, cumin, coriander powder, chili powder, bay leaf and MDH Rajma Masala.

Rajma usually calls for garam masala and methi (fenugreek), but I didn’t have either of them here D: So I improvised and used some MDH Pakora Masala instead xD

It’s served with basmati rice with turmeric, although the rice turned out a little more reddish than yellow D:

A quick detour for a #foodporn post...

I am sure everyone reading this eats produce, maybe organic from a Farmer's Market, or off a grocery store rack.

But did you know that WAY back in the day, growers would brand their produce, to build name recognition so they could get premium prices from mostly East Coast buyers?

The names were printed on a "Box End" label, stapled on to the end of a wooden crate.

This is one of my collection, Trout brand apples from Chelan, Washington.

@retrosponge & I did another dump dish this week, a #salmon #feta #bake. Turned out pretty good, definitely a different flavour (I think I was a little too heavy with the pesto).

I didn't have an actual recipe to follow, since the one I kept seeing was paywalled! But it wasn't hard to figure out.

Even better the next day. And I got a pound cake given today, so I used what I had on hand to make strawberry shortcake for dessert.

Today I baked pizza again 🍕

This time I shot the photo in RAW and developed it in darktable. The settings I experimented with were: slight exposure adjustment (+0.2 EV), a slightly warmer white balance, Filmic RGB, Color Balance RGB (more chroma and brilliance), Color Equalizer (slightly enhanced reds and oranges), Local Contrast, Diffuse or Sharpen and Lens Correction.
