Sous vide duck breasts, flash fried to get the fat out from under the skin (yes, these could have done with another 30 seconds, or an even hotter pan), very buttery mashed potato, and a green vegetable from the garden, species uncertain. The sauce had hoi-sin in it, naturally.

Confit duck legs are lovely, but I was tired of always serving them with some kind of potato (sautéed in olive oil is my favourite), vegetables, and a sauce.
